Grab ya chair and your tea and lets talk about some of the oddest things I have canned that people just can’t believe.
I never knew that I could preserve most of the items that I now make myself, can and conserve. Not just the food either, but the tradition and the memories, the stories, hard work and tears that come along with it.
This is why I call it My Kitchen My Rules… Because I have done whats in the book and I know that it can be done. You don’t have to have the approval of others, just the confidence to take the steps to do it yourself and supply your family with your hard work.
We have already covered Flower Jelly, goodness I caught a lot of grief over feeding my kids flowers. But man I love the way they taste, and the health benefits from harvesting plants from the earth! No commercially grown ingredients or preservatives.
Desserts: I have personally done a few different desserts and I haven’t not liked any of them. I have used my Great Grandmother Cookie’s recipe for Zucchini Bread and canned it. I have done canned cheesecake and Pineapple Upside Down Cake. All of which had a great shelf life and tasted great 6-12 months after being canned. (There was none left after that period of time).
Dairy Products such as butter. You can absolutely can butter. Ya know how if you have ever made gravy from scratch and needed to melt your butter until all the water is gone from it? Well when you can butter the water actually separates and goes to the bottom and saves you time trying to get all the water removed.
Mandarin Oranges: Yep you read right. Wow the struggle with peeling a ton of those little cuties! But it was a great turn out! The family enjoyed the jars of those little guys. Don’t forget to get all the peel off though. They are really bitter if you don’t.
Potatoes: My family loves Homemade French Fries. So much that I bought a commercial fry cutter and canned my french fries so that all I had to do was heat my grease and pour out a few cans of french fries. So easy to take a day to do to have a few month supply of taters in the cellar.
Brown Beans: I love a big pot of brown beans and cornbread. I don’t love the amount of time it takes to make it. So all in another day’s time, you can preserve ya up an abundance of brown beans, add ya some onion, bacon pieces and I add some jalapenos for spice. Can them up, put them in the cellar and enjoy for a quick supper all through the year. If ya want to step up your game…. Can ya some cornbread too!
Sausage: Growing up my Mom and Gran canned pork tenderloins, and sausage. I don’t know why people gave me a hard time about it. But anyway. Sausage patties that are already cooked. Just need to be heated up.
Yes it is so easy to run into the grocery store and buy most things, but it is also so disgusting. If you get used to eating things you make yourself. You don’t want what everyone else makes. You want to eat it all from your kitchen. Ya know how when you go to a family or friend gathering and you just know (or hope) that your friend or family member makes this specific dish because nobody on the planet makes it like them and you have spent all day knowing that they are coming and your mouth is watering just thinking about enjoying the dish they are bringing? That’s how you get when you start making your own stuff at home.
Following the traditions of our ancestors that have passed on humanity and food recipes for thousands and thousands of years. Think about it like this… humanity has survived so long without the mass production of food and medication. Now people are relying on someone else to supply them with what they need and they die early, have multiple autoimmune disorders and are unhealthy to the core.
We don’t want that for our kids or grand kids. We want to be healthy and educational! So come back for more information on things that you can definitely do yourself, even if someone ridicules you for it.
